Cosumnes Oaks High School

Culinary Arts Academy (CAA) — Cosumnes Oaks High School’s Culinary Arts Academy provides students with an interest in the culinary arts field hands-on learning experiences within a professional kitchen environment. Culinary Arts Academy students receive a four-year sequenced curriculum that prepares them for National Restaurant Certification. Students learn nutrition science, restaurant management, food chemistry and culinary skills to prepare them for employment in the hospitality, tourism or recreation industry.

CAA uses the “ProStart” industry-certified culinary curriculum that allows junior and senior students the opportunity to work at restaurants prior to graduation. Students also have the opportunity to become ServSafe-certified while in the academy, allowing them to work in the food service industry while still enrolled at Cosumnes Oaks.

Elk Grove High School

Culinary Arts Pathway

The Culinary Arts Pathway for EGHS consists of three classes: Work Readiness and Careers (Introductory), Introduction to Culinary Arts and World Cuisines (Concentrator) and Advanced Culinary Arts (Capstone). Students in this pathway learn foundational culinary skills and explore international food culture and equipment. The pathway also focuses on career exploration and provides additional exposure to industry professionals.

Graduates will be highly proficient or knowledgeable in the following: Knife Skills, Safety & Sanitation, Food Preparation Information and Skills and Industry/Workplace expectations. Additionally, students will explore the creative and artistic aspects of food creation and presentation.

Florin High School

Culinary Arts Pathway

The Culinary Arts Pathway at Florin High School is designed to develop career-based culinary knowledge and skills starting at the beginning level and progressing towards increasingly advanced expertise and training. Students will receive instruction in a wide variety of culinary topics and practice techniques that help prepare them for their future educational and career aspirations. Courses include Focus on College and Career (Get Focused…Stay Focused), Introduction to Culinary Arts and World Cuisines and Professional Culinary Arts providing a well-rounded and in-depth curriculum. Advanced students have the opportunity to apply their skills through the operation of an on-campus bistro and frequent
catering events.
